This week, by request, we are sharing two more recipes from the Henderson County Women’s Favorite Recipes and Weekly Recipe Service Cook book published in 1935 by the Stronghurst Graphic newspaper. (See the January 7th Artifact of the Week) This cook book was gifted to the Henderson County Museum by the late Esther Marshall of Stronghurst.
2 cups sugar
⅓ cup cocoa
1 tablespoonful corn syrup
2 tablespoonsful butter
½ cup mild
1 teaspoonful vanilla
Put all ingredients but vanilla in a sauce pan. Bring to boiling point and boil without stirring. Remove from fire when it forms a soft ball in cold water. Let cool. Add flavoring and beat until creamy. Pour on buttered plate and cut.
2 cups sifted cake flour
2 tablespoonsful baking powder
¼ teaspoonful salt
4 tablespoonsful butter or lard
1 cup sugar
1 egg, unbeaten
1 teaspoonful grated lemon rind
¾ cup mild,
Cream butter and sugar. Add egg and lemon. Add other ingredients and mix well. Bake in moderate oven in tube pan.
